GUESS WHO’S BIRTHDAY!!

Awwww, you came back!! 

You are just so sweet! Clever enough, that brings us to this week's topic.... 

Megan made cookies!!! 

It is SO exciting. I have personally been waiting patiently for weeks for these cookies- and it was worth it! They are the most delicious sea salt chocolate chip cookies ever. 

So, a little backstory, I went up to Fargo with Ethan- my boyfriend :) -and we of course went to a coffee shop. It was downtown Fargo called The Moonrise Cafe. Interesting logo, interesting coffee shop vibes, the coffee was only okay, but the cookies I got could not have been better. It was literally so good. I told the baker of the house, that is- Megan, that she needed to make me some. That's what sisters do, right? Well, each time that I asked her, she added 5 more days onto her timespan. I soon gave up and didn't bother asking. Though I did sneak in some silly little looks when baking was mentioned- of which she was not amused by. 

FINALLY, I got Megan cookies. For those who have yet to try these, you are missing out!! They are so, so wonderful. Megan bakes a lot; she experiments and usually stays up late with it lol. In a previous blog, I introduced her and Ruby- our brand new, bright red stand mixer. This was bought from a random guy who fixes up appliances, I guess. Backroad shenanigans! 

One of the coolest and most impressive things that Megan has made is Macarons. These are a delicate dessert that requires planning, proper execution, time, and the right mindset and weather to make. Which Megan has totally perfected. Some of the flavors she has made were super cool and delicious, one included a jelly filling. Usually, she colors them with all-natural colorings, like blueberries! She even made her own powdered sugar once- that made them 1000 times better. It was so perfect haha! 

Anywho, cheers to Megan for being a super awesome baker even when it takes forever to get the yummy little treats! (Love you, Meg!!) 

To the baker of sourdough in the house, that is my mom, she finally made some sourdough bread for the first time in like 3 weeks. She claimed that she was using "too much flour" so she put a slight pause to it. I mean, can one really make too much bread? We were fine throughout those weeks because of all of the frozen stuff she saved... 

Honestly, the best breakfast you can make is two pieces of sourdough-toasted, with a fried egg and cheese. Pair that with a cup of coffee and you are good to go!! 

In even bigger news....

IT'S MOM'S BIRTHDAY TODAY! Everybody, show her some love in the comments!! Cue: "happy, happy birthday, from all of us to you..." hah! This homesteading mom is absolutely amazing. She takes care of us (and her homestead) so wonderfully and is always there to help. So yes, comment below the sweetest message to her, we appreciate mom- Becky!! 

We are celebrating the big day with a trip to Fargo. Which means: some shopping, good eating, and some even funnier stories from Foxie Roxie... so stay tuned for next week funnies!! 

What's Grandma Roxie been up to? Well, she just bought some new plaid pajamas from Walmart and has been loving them ever since. We truly hope that she has washed them....

Barnwood Cafe :)

One last thing, we are trying to get the word out! The church that we attend- Worship Barn- is working on starting a gourmet & free cafe. This is called the Barnwood Cafe! We have done so much renovating and remodeling to it; it is looking amazing! The first event we are doing will be on the 14th of this month, November. Between the hours of 9am-3pm, with lunch being served from 11am-3pm. Specialty coffees, gourmet grilled cheese with tomato soup, and all of it will be free. Come join us for fellowship!
